The newest release of "editor" gets set as default and windows keeps of setting it back as default every time I try to set "viewer" as default.

We have seen reports of windows changing the default viewer from us back to other apps, usually Microsoft Edge, as the current windows default PDF viewing app, but never the other way around. Just to be sure, you do mean that our PDF-Xchange Editor, is becoming the Default PDF viewer, even after you have manually changed the Default via the windows "default apps" window in Windows 11?
I should also note that the PDF-XChange Viewer has been discontinued for over 10 years now, and was not designed with windows 11 in mind, so it is expected to run into some problems using such an outdates app on a modern OS, mainly in relation to external devices, like printing, and scanning, which have seen drastic changes since windows 7.

have you tried using the Editor's "classic UI" yet? it is very much reminiscent of the Viewer, with a few extra bells and whistles, and may help you to adapt to the newer software, to take advantage of the new functions and security improvements that are available.
