Office2PDF allows:
Save Generated PDF File
Generate PDF, Email then Delete
I'm looking to batch convert (watched folder) and delete the word document on successful pdf creation.
Is there an option I'm missing?

I don't think you are missing anything. Office2PDF does not allow deletion of the source file in a watched foilder in it's current form.
